","subitem_description_type":"Other"}]},"item_3_description_46":{"attribute_name":"資源タイプ","attribute_value_mlt":[{"subitem_description":"text","subitem_description_type":"Other"}]},"item_3_description_7":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"日本の高度成長期には社会・生活環境が変貌し、食生活においても大きな変化が起きた。従前は家庭内で調理された内食を家族がそろって食べるのが普通であったが、外部に食を委託する形の外食や中食といった産業が大きく成長し、食生活は短い期間で大きく変革した。\n中でも出来上がった食事を家庭に持ち帰り食べる中食は、多くの消費者に受け入れられ現在でも市場の拡大が続いている。この中食産業をリードしてきたのが、コンビニエンスストアーであり、豊富な品ぞろえや24時間営業などの利便性から、急速に店舗数を増やし生活になくてはならない産業となった。コンビニエンスストアーの中食がここまで伸長してきたのには、単に豊富な品ぞろえや24時間営業などの利便性だけでなく、おいしさの追求による消費者満足を常に志向してきたことが大きな要因と考える。\n本稿では実際にコンビニエンスストアーのでん粉を主体とした中食の原材料調査を行い、加工デンプンが相当量配合されている実態を確認した。機能性素材である加工デンプンがこれらの中食のおいしさに寄与していることが推察され、食品添加物としての有用性を検証した。\n本稿が、食品添加物が食の豊かさに貢献していることへの消費者の理解を促進し、有用かつ安全な食品添加物が忌避されなくなることへの一助となるよう期待する。","subitem_description_type":"Abstract"}]},"item_3_full_name_2":{"attribute_name":"著者(ヨミ)","attribute_value_mlt":[{"nameIdentifiers":[{"nameIdentifier":"7115","nameIdentifierScheme":"WEKO"}],"names":[{"name":"アマカイ,
