","subitem_description_type":"Other"}]},"item_3_description_46":{"attribute_name":"資源タイプ","attribute_value_mlt":[{"subitem_description":"text","subitem_description_type":"Other"}]},"item_3_description_7":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"筆者の研究関心は、ナイトクラブなど社交料飲業の前身といわれている明治期のカフェーが、なぜ女性による給仕を伴って受容されていったのかという問いである。本稿は、この問いを解明するための基礎資料として、明治後期に銀座に登場したカフェーに関する情報を整理したものである。日本で最初にカフェーという言葉を使用した店は、1911（明治44）年に銀座にオープンした「カフェー・プランタン」であるが、初めて女給をおいた店は1905（明治38）年12月に銀座にオープンした「台湾喫茶店」であったというのが、飲食文化史の研究においては定説である。しかし、女性による給仕自体は「台湾喫茶店」以前から牛鍋屋でもビアホールでも行われていた。それにも関わらず、「台湾喫茶店」が初めて女給を置いたとされているのはなぜだろうか。「台湾喫茶店」の現場を切り盛りしていたおかみさんのインタビュー記事や永井荷風の日記によると、「台湾喫茶店」のおかみさんが1904年の米国セントルイス万国博覧会で洋行した元新橋芸者であったことがわかる。元新橋芸者である彼女がセントルイス万国博覧会において世界各国の人々を接客したのちに、「台湾喫茶店」の現場を指揮したことは、接客における日本近世文化と西洋文化の最初の出会いであった、と捉えることができるだろう。","subitem_description_type":"Abstract"}]},"item_3_full_name_2":{"attribute_name":"著者(ヨミ)","attribute_value_mlt":[{"nameIdentifiers":[{"nameIdentifier":"7233","nameIdentifierScheme":"WEKO"}],"names":[{"name":"オゼキ,
